OVEN-BAKED ANCHOVIES

Ingredients for 6 persons:

 - 1200 g anchovies 
 - 3 stale rolls 
 - 2 milk glasses 
 - 3 cloves garlic 
 - parsley 
 - basil 
 - 60 g grated Parmesan cheese 
 - 1 egg 
 - salt and pepper 
 - 1 glass of olive oil 
 - 1 sliced lemon 
 - 2 sliced tomatoes 

Preparation:

Place the stale rolls to soak in the milk. Wash and bone the anchovies, then place them in rays in a round ovenproof dish previously oiled. When the bread has absorbed the milk, mash it with the finely chopped garlic and basil. Add the cheese, salt and pepper. Whisk the egg in the mixture. Stuff the anchovies with the mixture without tearing them. Season with oil, salt and pepper and cook in warm oven for about 30 mins. until they are golden. Remove from the oven, decorate with sliced tomatoes, basil leaves, parsley and sliced lemon, then serve.
