MIXED FISH FRY

Ingredients for 6-8 persons:

- 600 g of prawns
- 600 g of crayfishes 
- 600 g of shrimps 
- 3 spoons of flour 
- frying oil 
- 1 lemon 
- salt 
- salad

Preparation:

Remove the shell from prawns, crayfishes and shrimps; wash them many times putting lemon juice or salt in the water. Dry and flour them. Use a big frying pan. Fry first the little-size ones, since they have to be cooked quickly and at a high temperature; then the big-size ones, since they have to be cooked slowly and on a low flame. So put them on the pan in order of size. When they are brown and crisp take them using a skimmer and dry them with blotting paper. Salt and serve them hot dressed with slices of lemon and fresh salad.
