PIZZA MONACONE

 

Ingredients for 6 persons:

- 4 aubergines 
- 200 grs minced veal  
- 60 grs ham 
- 100 grs fontina and 100 grs mozzarella 
- 2 eggs 
- 5 little tomatoes 
- Basil, parsley and salt 
- 400 grs fresh or frozen puff-pastry 


Preparation:

Spread the batter with the help of the rolling-pin until the pastry will result not very thin. Line the basin (25 cm diameter, 5 cm height) with the pastry. Pour the ingredients previously prepared and cover with the remaining pastry. Bake at the temperature of 180° for about 40 minutes.

STUFFING

Fry in a pan the aubergines cutted in cubes. Put in a bowl the minced meat and the eggs, the parsley and the basil previously minced. Mix together gently and shape balls of little size, then fry them into hot oil. Put the balls and the fried aubergines into a bowl, add the ham and the slice of fontina and mozzarella cutted into pieces and sprinkle with tomato the ingredients. Spread the obtained mixture on the pastry, already rolled on the basin. Cover with the remaining pastry, brush with yolk and put in oven at 170° for about 35 minutes.
